I'm Gene Kellogg, president and principal of ECS. When my wife's parents decided it was time to sell their home and move into an Independent Living Community in Peoria, Illinois, I was highly interested in the food aspect of this lifestyle change. They were and remain discriminating diners ever since I first met them. Their experiences included restaurants across the US and world wide, dining on the best cruise lines, pot luck with friends; and dinner at their house was always superb. So yes, I was very interested in the food served at their community. So were they!

I made a revealing discovery. The food wasn't as good as the cruise lines. It wasn't on a par with their favorite restaurants. And while it was nutritious and tasty, it was not as good as my mother-in-law's cooking. The real discovery was "that it could be."

While I was with Marriott, we entered the Senior Living market with a hospitality approach to food as well as lifestyle enhancement facilities and services. We applied the same standards that we held our hotels and contract food service operations to. And then we applied our best management operating and information systems to Senior Living Food Service. ECS now brings these same best-demonstrated systems and standards to the Independent and Senior Living market so that you can offer restaurant and cruise line quality food and menus within your current budget.

We also visited and studied other independent and senior living communities and found that dining options and quality range from "Three Star" to adequate and nutritious. As more and more discerning couples and singles, and their families consider this new lifestyle option, more communities and options will emerge.
